DO NOT unwrap the plastic from around the block. The plastic keeps the block from drying out.

Cut a 6” crosscut on the side of the block, then face the crosscut up. The mushrooms will grow out of this cut.

Place the block in a humid place and spritz with water every few hours.

These mushrooms like a lot of water so keep the cross-cut moist!

If in a dry climate, place the cheese cloth over the crosscut and spritz it 4-6 times a day to keep the cloth moist.

The mushroom block requires some light, but not direct sunlight. Artificial light is ok, or indirect light from a small window. A kitchen or bathroom counter is perfect.

Mushrooms require fresh air so do not place the block in a closed space.

Mushrooms pins will begin to emerge in about 3-5 days and will double in size daily. Remove the cheese cloth once pins are ½ inch or higher.

You may need to expand the cut slightly if you see mushroom pins forming just underneath the edge of the crosscut.

You may see mushrooms pins forming underneath the plastic away from the crosscut. Do not expose these pins.

Mushrooms will be ready to harvest in approximately 7-10 days.

To harvest, put your hand underneath the mushroom cluster and slowly pry the mushroom cluster from the block. Use scissors to trim any substrate still attached to the cluster.

Keep harvested mushrooms in a paper bag in the fridge for best results. Mushrooms should stay fresh for 5-7 days before showing signs of dryness.

To get a second harvest, remove any mushroom tissue still on the block and then pour water onto the block. Allow the water to soak for 5 to 10 minutes, adding more water as needed to keep the block wet.

Drain any excess water from the block and resume regular spritzing to keep the block moist.

In 4-6 days, new pins should form on the block. You may need to expand the cut if you see mushroom pins forming just underneath the edge of the crosscut.
